Verivorsti Recipe:
https://www.thepauperedchef.com/article/there-will-be-blood-sausages
Blood sausage stuffing/VORSTIPUDRU
· 1.5 pounds pearl barley (cooked not too mush)
· 1 pound salt pork this could be also replaced with Bacon)
· 1/2 pound fresh pork belly
· 2 cups chopped onions
· 1 tablespoon salt
· 3 tablespoons dried marjoram
· Garlic to taste... (there is no garlic in the recipes, and it is quite boring, we
have added garlic in the past and it is good)
Meat can be cubed, or ground up... both are fine. Barley gives enough texture.
We have casings, blood, extra marjoram and Italian spice to add. Blood will be added at the
end so we can taste the stuffing.
